Macadamia nut and date pie

Dough: 4 cups macadamia nuts, 2 cups dates (seedless)
juice of one orange, 1 teaspoon salt, 1/4 teaspoon any liqueur or vanilla extract.
Thoroughly grind the macadamia nuts in a food processor and transfer to a bowl. Next, combine the dates and orange juice, blend in a food processor and place in the bowl with the nuts. Add salt and liqueur and mix thoroughly.
Spread the batter in a thin layer on a flat plate. Slice bananas or any other fruit into thin slices and place on top of the batter. Cover the top with another layer of nut dough. Decorate the cake with thinly sliced orange slices (or any other fruit) and nuts. Serves 8-12 people.

Nut or seed kefir
1 cup of any nuts or seeds soaked since the evening
1 1/2 cups water
Mix the nuts and water thoroughly in a mixer. Add water until you get the consistency of heavy cream. Strain through cheesecloth, pour into a jar and cover with cheesecloth to allow the liquid to "breathe". Put the jar in a warm place where the temperature is 90-100 F. Kefir will be ready in about 6-12 hours.
Kefir can be made with sesame seeds, almonds, hazelnuts, cashews, sunflower seeds and any other nuts and seeds and their combinations. You can add honey, lemon juice, sea salt, vanilla, etc. for flavor. The longer the kefir stands in the heat, the more sour it will be.
